But just imagine the best parts of peanut butter, oatmeal, and chocolate chip cookies all rolled into one! That’s exactly what we have here. Plus, the added bonus of sourdough cultures and whole wheat flour, but you’d never guess it.
It hasn’t take long for these comfort food cookies to become a staple in our household. I know these treats are supplying us with all kinds of nutritional benefits, and the rest of the family just thinks they’re a scrumptious snack. I can feel good watching them devour an array of vitamins (especially Bs) & minerals, fibre, protein, healthy fats, and probiotics.
The beneficial sourdough cultures can aid in digestion & nutrient absorption and promote overall gut health. Whole wheat flour is higher in almost every vitamin and mineral than white flour. If you can score freshly milled, whole wheat flour the levels are even greater. The increased fibre that whole wheat flour provides helps to regulate blood sugar, reducing the spike that often accompanies goodies like cookies.
Start by preheating your oven to 350F and lining a baking sheet with parchment paper.
Cream together butter, brown sugar and vanilla.
Add the remaining ingredients, except chocolate chips and mix with a hand or stand mixer until combined. The dough can be quite crumbly and dry at this point. If it seems too dry, test it by squeezing a ball in your hand. If it stays together, it is just right. If it falls apart add 1-2 tablespoons of water. Mix in the chocolate chips.
Form the dough into balls using about two tablespoons of dough. Place balls on the parchment lined baking sheet and flatten slightly with your hand or the back of a spoon.
Bake at 350F for 10-12 minutes. When bottom is just slightly brown, transfer to rack to cool.

Wild Wholesome Cookies
Ingredients
- 1/2 cup butter softened
- 1 cup brown sugar
- 1 tsp vanilla
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 cup oats quick or old fashioned
- 1/2 cup sourdough discard
- 1/2 cup natural peanut butter or other nut/seed butter
- 1 egg
- 1/4 tsp salt
- 3/4 cup chocolate chips
Instructions
- Preheat the oven to 350F. Line a baking sheet with parchment paper.
- Cream together butter, brown sugar and vanilla.
- Add the remaining ingredients, except chocolate chips. Mix well with a hand or stand mixer until combined. Dough will be quite crumbly/dry.
