Whole Wheat Oatmeal Muffins

This super simple recipe is delicious on its own and makes the perfect base for your favorite additions like fresh berries, chocolate chips or nuts. These are a hit with my entire family.

You may be thinking that whole wheat and oatmeal would result in a dry muffin however, these are anything but. The addition of applesauce allows for a reduction in sugar and locks in the moisture. Unsweetened applesauce can be easily made following this recipe and is a great way to use up apples before they go to waste.

Oats are among the top 3 crops when it comes to glyphosate (Round-Up) levels, with some brands even exceeding the measurement that is deemed ‘safe’. Choosing all organic ingredients may not be an option for everyone, but one I recommend buying organic is oats. This does not mean they are 100% herbicide and pesticide free, but they are glyphosate-free.

I love making these muffins with freshly milled flour. Wheat is another crop that is usually high is glyphosate, but most is also ‘enriched’. That sounds great; the addition of nutrients…not exactly. During the conventional milling process the majority of nutritional value is lost and what is left deteriorates as it sits on the shelf. The process of enrichment is adding back what hs been removed by spraying the flour with synthetic versions of the nutrients. Essentially, removing the natural version to replace it with a synthetic one to extend shelf life. Finding unenriched flour can be difficult, but not impossible. The ideal option is sourcing organic wheat berries and milling them yourself or purchasing from someone local. If these are not options, organic whole wheat flour can be purchased at most grocery stores.

Step one is the most important step in this recipe and the key to a moist muffin. Combine the oats and milk and leave it for 5-10 minutes. I typically mix the two and get the rest of my ingredients ready and pan prepped during the wait time.

Next you’ll add the butter, applesauce and brown sugar and mix well. There is no need for an electric mixer, a spoon works just fine.

Finally, add the flour, baking powder, salt, and cinnamon and mix just until just combined. If you wish to add some berries, nuts, or chocolate chips they can be gently mixed in now.

Spoon the batter into lined or greased muffin pan and bake at 400F for 18-20 minutes. This is my favorite muffin pan.

I recommend freezing any that will not be enjoyed within 3 days of baking. This will prevent them drying out. They can easily go straight from the freezer to the microwave to thaw for a quick snack. Try adding some Chia Seed Jam for a fruity twist.

Whole Wheat Oatmeal Muffins

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp Salt
  • *Optional: 1/2-3/4 cup chocolate chips berries, nuts, etc.

Method
 

  1. Mix oats and milk, let soak 5-10 minutes.
  2. Add sugar, applesauce, butter and mix well.
  3. Add flour, baking powder, cinnamon, salt. Mix until just combined.
  4. Bake at 400F for 18-20 minutes
