Banana Muffins

Classic banana muffins made with whole wheat flour and sweetened with honey.
Servings: 12 muffins

Ingredients
  

  • 2-3 bananas mashed
  • ½ cup honey
  • 1 egg
  • cup butter melted
  • ¾ cup whole wheat flour
  • ¾ cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • Optional: up to 1 cup of add-ins

Method
 

  1. Preheat oven to 350F. Prepare muffin pan with liners.
  2. Mash bananas in a large bowl.
  3. Add honey, egg, and butter and stir until well combined.
  4. Add flours, baking powder, baking soda, and salt. Fold until just combined.
  5. Fold in additional ingredients.
  6. Transfer to prepared muffin pan. Bake for 22-25 minutes.
  7. *Up to 1 cup of additional ingredients can be added. These could be nuts, chocolate chips, coconut, dried fruit, etc.
