This is one of my family’s favorite recipes, I’ve been using it for nearly 10 years. Throughout the years I have made many adjustments and have settled on this version. The main differences between this one and the original are the replacement of white sugar with honey and swapping some of the flour for whole wheat.

Why do I love it? I can make it a little different each time, it uses ingredients I usually have on hand, and it only requires a bowl and spoon for mixing the ingredients.

Start by mashing the bananas until they are a good consistency for you. We prefer a smooth texture to avoid chunks of banana in the muffins, but feel free to leave them a little chunkier if you wish. This recipe works with 2 or 3 medium-sized bananas. Adding the third will increase the moisture and banana flavor.

Once, you have your bananas ready, add the honey, egg, butter, and vanilla. Stir until well combined. It may take a minute or two to fully incorporate the butter but there is no need for an electric mixer, just a little patience.

Add the flours, baking soda, baking powder, and salt (I use Redmond Real Salt) and give it a quick mix until it’s just combined. If you plan to add additional ingredients you can stop just before its fully combined.

Spice up your recipe with your favorite extras. I made this recipe once a week for quite a long time and we never got tired of it, thanks to switching up the bonus ingredients each time.
Some of our favorite additions:
Coconut & Almonds
Dried Cranberries (or other fruit)
Chocolate Chips & Almonds
Pecans
Cinnamon

Add up to 1 cup of extras, give it a quick stir.

Fill your prepared muffin tins 2/3 – 3/4 full with batter. Bake at 350F for 22-25 minutes. Test for doneness by inserting a toothpick, if it comes out clean, they are done.

I love these baking pans and use them for nearly all of my baking projects.

Transfer to a rack to cool.

This recipe freezes great. I usually keep a few out for snacking and toss the rest in a freezer bag in the freezer and pull them directly from the freezer for lunches.

Banana Muffins

Classic banana muffins made with whole wheat flour and sweetened with honey.
Servings 12 muffins

Ingredients
  

  • 2-3 bananas mashed
  • ½ cup honey
  • 1 egg
  • cup butter melted
  • ¾ cup whole wheat flour
  • ¾ cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • Optional: up to 1 cup of add-ins

Instructions
 

  • Preheat oven to 350F. Prepare muffin pan with liners.
  • Mash bananas in a large bowl.
  • Add honey, egg, and butter and stir until well combined.
  • Add flours, baking powder, baking soda, and salt. Fold until just combined.
  • Fold in additional ingredients.
  • Transfer to prepared muffin pan. Bake for 22-25 minutes.
  • *Up to 1 cup of additional ingredients can be added. These could be nuts, chocolate chips, coconut, dried fruit, etc.
